Couscous Salad


I got this recipe from my friend, Lillian, who used to make this all the time for us. I decided to make it for my family Christmas Eve party. My cousins liked it so much, they asked me to make it again for our New Year Eve's party. Then my family asked that there be a batch at home. In the past two weeks, I've made this cous cous salad five times. It contains cous cous, cucumber, tomato, pine nuts, toasted almonds, dried cranberries, mint, parsley, and lemon juice. I'm still not sick of it yet.

  2. Of course! Here it is :

    1 and 1/4 cup chicken broth
    1 cup couscous
    1 medium tomato diced
    1 medium cucumber diced
    1 medium green onion sliced
    1/4 cup toasted almonds ( I usually add more than that)
    1/3 cup pine nuts
    1/4 cup cranberries (I usually add more than that too)
    1 large lemon or 2 small ones juiced
    1/4 cup olive oil
    3 tablespoon fresh mint chopped (1/2 cup)
    2 tbsp fresh parsley (1/2 cup)
    1/4 tsp salt
    1/4 tsp ground pepper
    1 clove minced garlic

    Bring chicken broth to boil in small saucepan over high heat. Add couscous and reduce heat to low. Cover and simmer for 3-5 minutes until liquid is absorbed. Remove from heat, fluff with fork, and cool to room temp. Meanwhile, combine remaining ingredients in large bowl. Toss with couscous.
